Right around the time that Frank Potts was planting his nascent Bleasdale Vineyards during the 1850s, an eccentric Prussian named Herman Daenke established a homestead along the banks of Bremer River, which he called Metala. The site was planted to viticulture by Arthur Formby in 1891 and became one of Langhorne Creek's most productive vineyards, it continues to supply fruit for a number of prestigious national brands. Jim Beam uses yeast from their private stock, carefully cultured to maintain purity and consistency. To keep quality consistent, each vat uses a mix of new yeast and yeast from a prior distillation. A second distillation refines the alcohol's proof and flavor, producing a new condensate called high wine or white dog. The high wine is then transferred directly to barrels without filtering or additives. Jim Beam is distilled at lower temperatures and reduced to no more than 125 proof or 62.5% alcohol. This retains more of the Whiskey's natural, mellow character.
