Batches are crushed and treated to a period of cold maceration for optimal extractions of colour and tannin, followed by a traditional vinification at 25C to 28C, regularly plunged and pumped over in controlled fermenters. Upon completion, components are sent for a course of malolactic, rackings for clarification and term of bottle age.
