Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Although all of seven Islay distilleries produce very different Malts, they do have similar machinery. Part of life on an island is a reliance on your neighbour. This is why at each of the distilleries, you will find sheds filled with some very old parts. These are often rusted or broken but you never know when an old spring or cog can be reused in an emergency. Bunnahabhain XXV is an non chill filtered spirit, with natural colour and a higher strength of 46.3%, delivered in an Alder wooden chest lined with Hessian and closed with solid brass fittings.
Bunnahabhain are extremely picky in the selection of their oak barrels. They are individually inspected upon arrival to the distillery, if a cask is anything other than perfect, it will not be used for filling and will be dismantled.
