Right around the time that Frank Potts was planting his nascent Bleasdale Vineyards during the 1850s, an eccentric Prussian named Herman Daenke established a homestead along the banks of Bremer River, which he called Metala. The site was planted to viticulture by Arthur Formby in 1891 and became one of Langhorne Creek's most productive vineyards, it continues to supply fruit for a number of prestigious national brands. Maison Bouillot is still located in Nuits Saint Georges, continuing the tradition of Cremant de Bourgogne, having acquired international fame for the excellence of its wines.

Jean Bouillot was a wine and spirits merchant, one of the few of his day to specialize in Cremant de Bourgogne, Burgundy's methode traditionnelle sparkling wine. Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees. Bright straw yellow colour with tinges of green. Its herbaceous nose and soft citrus notes mingle with the fragrance of fresh, dewey grass and scents of freshly opened nuts.
