Working under the tutelage of legendary Coonawarra winemaker Bill Redman, Balnaves immersed himself in the culture of the vine, ultimately establishing a grande marque of Coonawarra and securing the inaugural presidency of the Coonawarra Vignerons Association. Sevenhill Cellars are nestled among the vineyards close to St Aloysius Church. Herr Weikert Block's red brown loam soils and cool, sheltered aspect are key elements in achieving the balanced growth and fine Riesling attributes of St Francis Xavier. The winemaking focus is on preservation of pristine fruit characters that develop during ripening of the berries. Grapes are picked during the coolest part of day, gently pressed and fermented at a very low temperature. Great care is taken to settle and bottle the wine quickly, ensuring the vineyard's signature flavours are captured.
Citrus green hues. Concentrated elegant perfume indicates the finesse of the St Aloysius style. In the mouth, the wine combines the fresh zest of citrus flavours with the toasty, nutty character that comes from bottle age. Mouthfuls of citrus fruit combine with enticing minerality, assertively astringent and a touch of lime, talcy yet pleasingly drying.
