Josef Chromy OAM escaped from war torn Czechoslovakia as a penniless 19 year old in 1950, he fled across minefields, evading soldiers and killer dogs, ultimately finding a new home in the lucky country. Chromy has been a long standing principal in the Tasmanian food and wine industry, he established Tasmania's leading brands, including Bay of Fires, Jansz, Heemskerk and Tamar Ridge. At 76 years young, he launched his namesake label, planting one of the apple isle's most stately vineyards and gazetting Tasmania's most compellingly stylish range of wines. Chromy's sensational vintages are as conspicuous for the uniqueness of their character as they are for their sublime and articulate charm. They divide.. Tasty treats from the apple isle»
Beechworth attracts the most artisanal winemakers, the region's rich mineral soils and parched, undulating terrains, breed wines of vigorous flavour, crystalline textures and boney savoury tannins. The first parcel of Crown Land in the region was acquired by Isaac Phillips in 1857, he christened his estate Golden Ball and built a hotel named Honeymooners Inn, servicing miners on their way up the steep trails to the Beechworth goldfields. The old pub remains but the surrounding land has been turned over to viticulture, planted to vine in the nineteen naughties, it produces a quality of wine that's reserved for the nation's most exclusive winelists. Served by savvy sommeliers and savoured by the most.. Small batches of beechworth's best»
Discovered by Dr Bertel Sundstrup in 1987, after a long search for the perfect site, the amphitheatre known as Dalrymple is a mere twelve hectares of sun drenched bucolic idyll, at the very heart of superior viticulture on the beauteous Apple Isle. This is Piper's Brook central, a place of auspicious winegrowing climes, long hours of sunlight and extended ripening seasons, which yield fruit of remarkable succulence, gracious acids and satin tannins. Dalrymple are a small, unincorporated winegrowing concern, whose accord with the elements and devotion to the land, are best articulated by the leisured pursuits of their chief vigneron, whose favourite pastimes are sheep herding, river fishing and making.. Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.
Honeyed in colour and bouquet, distinct for the finesse of it's slowly rising bubbles and persistent mousse. Maturation has not robbed it of an amazing floral freshness, it exhibits lovely aromas of ripe pear. Characters of brioche, sweet citrus and almond, exemplary for it's sophistication and flavours of plush lined fruit. A wine of the finest balance.
