Samuel Smith migrated from Dorset England to Angaston in the colony of South Australia circa 1847, he took up work as a gardener with George Fife Angas, the virtual founder of the colony. In 1849, Smith bought thirty acres and planted vines by moonlight, the first ever vintages of Yalumba. Jean Bouillot was a wine and spirits merchant, one of the few of his day to specialize in Cremant de Bourgogne, Burgundy's methode traditionnelle sparkling wine. Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees.
