Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Whitehaven pride themselves on their quality of fruit. Vines are trained to three or four canes on a vertical trellis. Balanced pruning, shoot thinning, tucking and trimming are used to achieve an open, healthy canopy and clean fruit as the cool nights serve to retain acid freshness and delicate flavours. Grapes are immediately with minimal contact on skins. After settling, the clear juices are vinified in fermenters at very low temperatures through the action of select yeast strains to preserve the distinctive Marlborough varietal characters.
Crystal clear, straw hues. Vibrant white currant, nettles and gooseberry aromas around a core of persistent grapefruit. Some pungent herbaceous and capsicum characters fill the background.
