Samuel Smith migrated from Dorset England to Angaston in the colony of South Australia circa 1847, he took up work as a gardener with George Fife Angas, the virtual founder of the colony. In 1849, Smith bought thirty acres and planted vines by moonlight, the first ever vintages of Yalumba. One of his most enduring legacies were some unique clones of Shiraz, which were ultimately sown to the illustrious Mount Edelstone vineyard in 1912. Angas's great grandchild Ron Angas acquired cuttings from the Edelstone site and migrated the precious plantings to his pastures at Hutton Vale. The land remains in family hands, a graze for flocks of some highly fortunate lamb. Blue Agave plants are grown high above the sea in mineral rich volcanic soil in the highlands of Jalisco, Mexico. It takes eight years for the Agave plants to ripen and they can only be harvested once. The jimador who harvests the Agave plants uses a steel tipped hoe to unroot the Agave and a machete to cut the spiny leaves from the body of the plant. This reveals the large pineapple shaped heart of the plant called a piña, which can weigh over 100 lbs. The Piñas are steamed in large stone ovens for up to 48 hours to enhance the flavor. The cooked Piñas are then pressed in mills to extract the Agave juice, to be fermented and double distilled. 1800 Reposado is rested in seasoned oak barrels for up to a year
