A vigorous Cabernet wine with dark fruit, lineal tannins and immaculate oak. The Flinders Bay label was born out of a joint venture between the Gillespie and Ireland families, bringing together a wealth of viticultural, winemaking and retail experience. The express objective was to maintain a total commitment to quality in site selection, fruit growing and viniculture. Each vintage, the Flinders Bay winemaking team take aim at producing a Bordelais styled Cabernet Sauvignon, to rank amongst the finest Margaret Rivers.
Alastair Gillespie has grown grapes in the Margaret River region for over twenty five years. He also owns and operates a viticultural contracting business, establishing, maintaining, pruning and harvesting for growers in all the viticultural regions of Western Australia. To produce consistently outstanding wines requires a single minded determination not to compromise. The Cabernet was grown at Willyabrup, on twenty six year old vines, and at Witchcliffe, twelve kilometres south of Margaret River on twenty four year old vines, some of the oldest in the region. Vinified at the O'Leary Walker wineworks and aged in mainly French oak hogsheads and barriques for eighteen months.
Deep purple colour. Intense cassis on the nose, ripe Cabernet fruit with dusty cigar box and curranty characters. Traces of violet and whisps of matchstick, aromas stemming from the oak, smelling like chocolate ice cream with blueberries atop. A very sound medium to full bodied red with warm but firm tannins and a smooth lasting finish.
