Returning to his home along the Nagambie Lakes after the completion of service during World War II, Eric Purbrick discovered a cache of wine, hidden circa 1876 under the family estate cellars. Though pale in colour, it was sound and drinkable after seven decades. The promise of long lived red wine inspired Purbrick to establish new plantings at Chateau Tahbilk in 1949, today they are some of Victoria's oldest productive Cabernet Sauvignon vines. Harvests are collated from fine vineyards across the premiere viticultural precincts of Veneto. Grapes are crushed and treated to a term of cold settling for clarification, followed by inoculation to choice yeasts and controlled ferments at 16C to 18C. Upon completion, batches are assembled into the finished wine and bottled for a term of age before release.
Straw yellow hues. Floral bouquets, acacia blossom, mineral notes, slateyness and meal, persimmons and pear. An intense, exquisitely balanced palate, filled with the fruits of the orchard, apples, nashi and pear. Wonderfuly textural and pleasingly dry, its parched citrus intensity makes a wonderful match with white meats, egg recipes or terrines.
