Chardonnay Yarra Valley Victoria
The McWilliams team are masters at striking perfect balance, while walking the tightrope between excellence and approachability. Harvests of choice Yarra Valley Chardonnay are treated to a course of the most extravagant vinification techniques, infusing the wine with opulent complexity and enriching the palate. The luxury of barrel ferments in French oak and two months lees stirring battonage, are followed by ageing in a high proportion of new French barriques, contributing classic old world characters of boulangèrie, savoury and grain.
Chardonnay is hand picked and sorted throughout the cool of early morning before being sent to the wineworks in chilled bins. Whole bunches are pressed, retaining only the finest free runs, minimal phenolic pickup and maximum flavour extraction being essential. After a cold settling, juices are transferred to French barrels for inoculation and seventeen days of ferment at moderate temperature. Upon completion, batches are treated to an extended course of two months lees stirring, followed by several months maturation in a selection of seasoned and new French oak barriques and hogsheads. Components are assembled, lightly fined and filtered before bottling in January.
Brilliant pale straw hue. Intense fresh fruit aromas, white peach, nectarine and fig, lovely complexing secondary characters of toast, struck match and cashews provide interest and intrigue. A full textural palate with wonderfully crisp, refreshing acid backbone, dominated by peach and nectarine flavours which linger through to the finish.
