Shiraz and Cabernet are harvested and separately crushed to fermenters, allowing for careful cap management and aeration, a process vital to harnessing the true potential of Margaret River reds. Vinification, maceration and aerations are employed to achieve the gentlest extraction of colour and tannins, preserving a true expression of each varietal. A small amount of Viognier may be co fermented with a parcel of Shiraz while on skins to add perfume and contribute some succulence to the palate. Components are matured fourteen months in a selection of seasoned French and American oak barriques before assembling into the finished wine.
Deep red/ maroon with purple hue. Beautiful blackberry and raspberry fruit leap from the glass while spicy pepper and cool peppermint nuances waft through the background above deeper layers of spice, sweet vanillan oak, violets and pink orchids. Full, round and juicy mouthfeel with tannins that are soft and silky upfront, a middle palate bursting with blackberry and raspberry fruits, pepper and cedar.
